Pecan Balls: Recipe Blog Hop

These have been a long-standing tradition on my side of the family (I have continued them with my now family, of the hubs & I). My grandma would make these EVERY Christmas without fail and she would make them by the hundreds! They produce the most wonderful smell in the kitchen (or entire house in my case because it's so small).

Without further ado...

Pecan Balls (aka: Mexican Wedding Cookies)

Preheat Oven to 325*

  • 1/2 cup powdered sugar (+more for rolling)
  • 1 cup butter, softened
  • 2 tsp. almond extract
  • 1 tsp. vanilla extract
  • 2 cups flour
  • 1/4 tsp. salt
  • 1 cup finely chopped or ground pecans
In large bowl, beat 1/2 cup powdered sugar, butter, and extracts until light and fluffy. Stir in flour, salt, and pecans. Mix until dough forms. Shape into 1 inch balls, place on ungreased cookie sheet.

Bake for 15-20 minutes. Watch closely until set but not brown. Remove from cookie sheet, cool slightly and roll in powdered sugar. Let cool completely and roll again.

ENJOY!

My husband is a rice krispie addict, if you were to ask him his FAVORITE treat that would be his answer... but after I made these, he said it was a VERY CLOSE second. He couldn't get over how they just melted in your mouth.

  1. So yummy! I baked a bunch of those for Christmas and Mr. Superman delivered them to all of our single Airmen neighbors. Soooo yummy!

  3. My Nana used to make them every year at Christmas, and now my mom does. But, since I live so far from home, I guess it's my turn to carry on the tradition. They are my favorite Christmas cookie. I don't think I could bring myself to make them any other time of year, though. And I agree, they do make the house smell wonderful! I think my Nana used to call them lady fingers and would shape them in a finger/log shape. My mom typically does balls though.
