Day #7 Mexican Wedding Cookies

Mexican Wedding Cookies

  • 1/2 cup powdered sugar +more for rolling
  • 1 cup butter
  • 2 cups flour
  • 1/4 tsp salt
  • 2 tsp almond extract
  • 1 tsp vanilla extract
  • 1 cup finely chopped pecans
Heat oven to 325*

Mix all ingredients until a crumbly dough forms. With hands, shape into 1in balls and place on an ungreased cookie sheet.

Bake for 15-20min watching closely until just set, do not let them brown!

Slightly cool on cookie sheet, roll in powdered sugar and place on wire rack to cool completely. Once cooled, roll in powdered sugar a second time.

Yields 36-48

These were my contribution to the cookie exchange, a tradition for Christmas that I am carrying on from my grandma! I miss her so much.
